Casserole is a container for flight catering. The name originates from the French word “casserole” and means “a pot of heat resistant material”. The aluminium trays are made of lacquered foil in the factory of the Formacion company, providing high barrier properties.

The casserole are used by catering companies for packaging and flight catering for passengers and air and train crews, as well as for catering in schools, hospitals, plants, etc.

According to the set of rules developed by IFCA and IFSA, the International associations of manufacturers of catering, the package used for hot food meets the following requirements:

  • To have high heat-resistance.

    This is due to the fact that in most cases, the flight catering meals for passengers, are stored at the airports in the refrigerators and are heated ingenuously prior to the flight or on-board the aircraft. Often (especially on the return flights) the hot catering meals are firstly subjected to intensive freezing (at temperatures up to -18°C) and then they are defrosted and heated up on-board.

  • To have high thermal conductivity and ensure uniform heating of the dish.

    To heat the trays with the product they are placed in the special ovens where they stay till start-up of an indicator lamp and are heated with a temperature up to +75-80°C (in the centre of a portion). The flight catering meals shall have a temperature of not less than 65°C during distribution on-board.

  • To have a high strength

    In order to ensure a safe flight catering, the package for hot dishes shall be made of a material that guarantees the safety and the integrity of the package.

  • To be compact

    The package of catering meals shall have compact sizes, convenient for stacking and storage due to the limited space.

  • To be non-toxic and aseptic (resistant to bacteria growth).

    The package shall be made of non-combustible materials that prevent bacterial growth and shall have high barrier properties.
